Sometimes I use a salad to serve the purpose of the meal’s vegetable…and sometimes I use a vegetable to serve the purpose of a meal’s salad. This was the latter, when I wanted to eat a salad but was not at all in the mood for lettuce or anything overly crunchy. Achieved.

Steam broccoli in the microwave for slightly under the low end of the recommended range (try 1:30) – you want it to remain firm since this is a salad of sorts. Toss it with sliced heart of palm, goat cheese, olive oil, maldon salt, and crushed red pepper.
